The Hotel de Paris’s history starts with that of the Town of Sète. In the 17th century, entry into the town was via Rue Lazare-Carnot; a simple wooden bridge, at the end of the street, allowed people to cross the Royal Canal to reach the Rue des Hôtes, a small street that rapidly became the hospitality district.

Located at the beginning of the street, bordering on the quay, the Hotel de Paris had one of the very few sources of clear water in the town, only some ten metres away from it. The establishment became a reference site, initially as an inn and later as a family guest house.
